Annascaul Black Pudding on Saturday Night with Miriam
Enjoyed seeing a clip of us eating pudding with Clodagh McKenna on “Saturday Night with Miriam” on the June 22nd.
We have moved to a natural collagen casing for our sausages. The reason for the switch is a world wide shortage in natural casings and a resultant price increase over the past few years of several hundred per cent. They are not sustainable any longer for us. The new casing is the nearest to natural on the market and that used by other artisan sausage producers whom we have researched.
However, every other element of the sausage is the exactly the same, ingredients, process etc. There is absolutely NO change to the nutritional value, ingredients etc. The most important part of our sausage is the meat – we continue to use only streaky pork belly which is the key difference between us and most other sausage producers.
