Ashe’s foodstore opened in Annascaul on the Dingle peninsula in 1916 by Michael F. Ashe. The store operated as a grocery shop that incorporated a butcher stall. Michael’s nephew Tom Ashe took over the running of the shop in 1955. Today, his son Thomas continues the family tradition.
An integral part of the butcher shop was the making of Annascaul Black Pudding. The original recipe for this unique pudding is still followed by Thomas today.
Production of Annascaul Black Pudding is at a dedicated high quality unit located at Ashe’s foodstore in Annascaul. The gourmet meat production unit is a state of the art location. Annascaul Black Pudding operates under the supervision of the veterinary section of Kerry County Council and is HACCP approved. The premises are currently in the process of being registered under:
A. European Communities (Fresh Meat) Regulations 1997 (S.I. no 434 of 1997).
B. European Communities (Minced meat and meat preparations) regulations 1996 (S.I. 43 of 1996)
